The One-Pan Tomato Orzo I Live On by Maxy69838

Creamy one-pan orzo in a rich tomato sauce with wilted spinach and parmesan.

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp tomato puree
  • 200g orzo
  • 1 x 400g tin chopped tomatoes
  • 500ml vegetable stock
  • 2 big handfuls baby spinach
  • 3 tbsp cream cheese (or a splash of double cream)
  • 30g grated parmesan
  • salt, black pepper, chilli flakes
  • fresh basil to finish

Instructions

  1. Soften the onion in olive oil over medium heat for 4-5 min, then add the garlic and tomato puree and cook 1 min more.
  2. Stir in the orzo so it toasts for a minute, then pour in the chopped tomatoes and the stock.
  3. Simmer 10-12 min, stirring often, until the orzo is tender and the sauce is thick and creamy.
  4. Off the heat stir through the cream cheese, parmesan and spinach until the spinach just wilts.
  5. Season well, finish with chilli flakes and torn basil, and serve straight from the pan.
