The One-Pan Tomato Orzo I Live On by Maxy69838

Creamy one-pan orzo in a rich tomato sauce with wilted spinach and parmesan.

Ingredients
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp tomato puree
- 200g orzo
- 1 x 400g tin chopped tomatoes
- 500ml vegetable stock
- 2 big handfuls baby spinach
- 3 tbsp cream cheese (or a splash of double cream)
- 30g grated parmesan
- salt, black pepper, chilli flakes
- fresh basil to finish
Instructions
- Soften the onion in olive oil over medium heat for 4-5 min, then add the garlic and tomato puree and cook 1 min more.
- Stir in the orzo so it toasts for a minute, then pour in the chopped tomatoes and the stock.
- Simmer 10-12 min, stirring often, until the orzo is tender and the sauce is thick and creamy.
- Off the heat stir through the cream cheese, parmesan and spinach until the spinach just wilts.
- Season well, finish with chilli flakes and torn basil, and serve straight from the pan.
