The Chimichurri Flank Steak I Cook All Summer by Maxy69838

Char-grilled flank steak sliced against the grain with a fresh chimichurri.

Ingredients
- 1 flank steak (about 700g)
- 2 tbsp olive oil (for the steak)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 large bunch flat-leaf parsley
- 1 small bunch coriander
- 3 garlic cloves
- 1 red chilli
- 3 tbsp red wine vinegar
- 6 tbsp olive oil (for the chimichurri)
Instructions
- Finely chop the parsley, coriander, garlic and chilli, then stir through the vinegar and olive oil for the chimichurri.
- Rub the flank steak with olive oil, salt and pepper.
- Grill over hot coals for a few minutes a side until well charred and medium-rare.
- Rest the steak for 5 min, then slice thinly against the grain.
- Pile the slices on the board and spoon the chimichurri over the top.
