The Chimichurri Flank Steak I Cook All Summer by Maxy69838

Char-grilled flank steak sliced against the grain with a fresh chimichurri.

Ingredients

  • 1 flank steak (about 700g)
  • 2 tbsp olive oil (for the steak)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 large bunch flat-leaf parsley
  • 1 small bunch coriander
  • 3 garlic cloves
  • 1 red chilli
  • 3 tbsp red wine vinegar
  • 6 tbsp olive oil (for the chimichurri)

Instructions

  1. Finely chop the parsley, coriander, garlic and chilli, then stir through the vinegar and olive oil for the chimichurri.
  2. Rub the flank steak with olive oil, salt and pepper.
  3. Grill over hot coals for a few minutes a side until well charred and medium-rare.
  4. Rest the steak for 5 min, then slice thinly against the grain.
  5. Pile the slices on the board and spoon the chimichurri over the top.
