Teriyaki chicken thigh skewered with caramelised pineapple and red pepper, grilled over coals.

Ingredients
- 600g chicken thigh, diced
- 4 tbsp teriyaki sauce
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 clove garlic, crushed
- 1 tsp grated ginger
- 1/2 fresh pineapple, cut into chunks
- 1 red pepper, cut into chunks
- 1 tsp toasted sesame seeds
- 1 spring onion, sliced
- vegetable oil (for the grate)
Instructions
- Toss the diced chicken thigh with the teriyaki, soy, honey, garlic and ginger and leave to marinate while you light the grill.
- Thread the chicken, pineapple chunks and red pepper alternately onto metal skewers.
- Oil the grate and grill over hot coals, turning, for about 10 to 12 minutes until the chicken is cooked and the pineapple caramelises.
- Brush with any leftover marinade in the last couple of minutes so it glazes.
- Scatter with sesame seeds and spring onion and serve.
