Teriyaki Chicken and Pineapple Skewers, Ready in 25 by Maxy69838

Teriyaki chicken thigh skewered with caramelised pineapple and red pepper, grilled over coals.

Ingredients

  • 600g chicken thigh, diced
  • 4 tbsp teriyaki sauce
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 clove garlic, crushed
  • 1 tsp grated ginger
  • 1/2 fresh pineapple, cut into chunks
  • 1 red pepper, cut into chunks
  • 1 tsp toasted sesame seeds
  • 1 spring onion, sliced
  • vegetable oil (for the grate)

Instructions

  1. Toss the diced chicken thigh with the teriyaki, soy, honey, garlic and ginger and leave to marinate while you light the grill.
  2. Thread the chicken, pineapple chunks and red pepper alternately onto metal skewers.
  3. Oil the grate and grill over hot coals, turning, for about 10 to 12 minutes until the chicken is cooked and the pineapple caramelises.
  4. Brush with any leftover marinade in the last couple of minutes so it glazes.
  5. Scatter with sesame seeds and spring onion and serve.
