Tandoori Chicken Thighs I Make Every Long Weekend by Maxy69838

Yoghurt and tandoori-spiced chicken thighs, charred over the coals.

Ingredients

  • 8 bone-in chicken thighs, skin on
  • 200g natural yoghurt
  • 2 tbsp tandoori masala
  • 1 tbsp grated ginger
  • 3 cloves garlic, crushed
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1 tbsp vegetable oil
  • 1 lemon, cut into wedges (to serve)

Instructions

  1. Slash each chicken thigh a couple of times through the skin so the marinade gets in.
  2. Mix the yoghurt, tandoori masala, ginger, garlic, lemon juice, salt and oil into a thick deep-red marinade.
  3. Coat the thighs all over and leave to marinate at least 30 minutes (longer if you have time).
  4. Grill over medium coals, turning, for about 18 to 20 minutes until charred outside and cooked through.
  5. Rest a couple of minutes and serve with lemon wedges.
