Smashed Cucumber Salad, the No Cook Side I Make on Repeat by Maxy69838

Smashed cucumber tossed in a soy, sesame and chilli dressing, served cold.

Ingredients

  • 2 cucumbers
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp honey
  • 2 cloves garlic, grated
  • 1 tsp chilli crisp (or to taste)
  • 1 tsp toasted sesame seeds
  • 1 small handful coriander, roughly chopped
  • 1/2 tsp salt

Instructions

  1. Smash the cucumbers with the flat of a knife or a rolling pin so they crack and splinter, then tear into rough chunks.
  2. Toss the cucumber with the salt and leave for 10 minutes, then tip off the water that draws out.
  3. Whisk the soy, rice vinegar, sesame oil, honey, garlic and chilli crisp into a quick dressing.
  4. Pour the dressing over the cucumber and toss well so it gets into all the cracks.
  5. Pile into a bowl, scatter with sesame seeds and coriander, and serve cold.
