Smashed cucumber tossed in a soy, sesame and chilli dressing, served cold.

Ingredients
- 2 cucumbers
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp honey
- 2 cloves garlic, grated
- 1 tsp chilli crisp (or to taste)
- 1 tsp toasted sesame seeds
- 1 small handful coriander, roughly chopped
- 1/2 tsp salt
Instructions
- Smash the cucumbers with the flat of a knife or a rolling pin so they crack and splinter, then tear into rough chunks.
- Toss the cucumber with the salt and leave for 10 minutes, then tip off the water that draws out.
- Whisk the soy, rice vinegar, sesame oil, honey, garlic and chilli crisp into a quick dressing.
- Pour the dressing over the cucumber and toss well so it gets into all the cracks.
- Pile into a bowl, scatter with sesame seeds and coriander, and serve cold.
