Thin smashed beef patties with crispy cheese edges in toasted brioche buns.

Ingredients
- 500g beef mince (20% fat)
- 1 tsp salt
- 1/2 tsp black pepper
- 4 slices American cheese
- 4 brioche burger buns
- 2 tbsp butter (for the buns)
- 4 tbsp burger sauce
- 1 small white onion, thinly sliced
- 8 slices of pickle
- a little oil (for the griddle)
Instructions
- Roll the mince into 4 loose balls and season with salt and pepper.
- Get a cast-iron griddle screaming hot on the grate, then smash each ball flat with a spatula and press for a hard crust.
- Flip once the edges crisp, lay a slice of cheese on each and let it melt over the edges.
- Butter and toast the brioche buns on the griddle.
- Build with burger sauce, the cheesy patties, sliced onion and pickles.
