Thin smashed beef patties with crispy cheese edges in toasted brioche buns.

Ingredients

  • 500g beef mince (20% fat)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 slices American cheese
  • 4 brioche burger buns
  • 2 tbsp butter (for the buns)
  • 4 tbsp burger sauce
  • 1 small white onion, thinly sliced
  • 8 slices of pickle
  • a little oil (for the griddle)

Instructions

  1. Roll the mince into 4 loose balls and season with salt and pepper.
  2. Get a cast-iron griddle screaming hot on the grate, then smash each ball flat with a spatula and press for a hard crust.
  3. Flip once the edges crisp, lay a slice of cheese on each and let it melt over the edges.
  4. Butter and toast the brioche buns on the griddle.
  5. Build with burger sauce, the cheesy patties, sliced onion and pickles.
