Peanut Satay Chicken Noodles, All One Pan by Maxy69838

Creamy peanut satay chicken tossed through noodles in one pan.

Ingredients

  • 2 chicken breasts, sliced
  • 200g egg noodles
  • 3 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp sweet chilli sauce
  • 1 tsp grated ginger
  • 1 garlic clove, minced
  • juice of 1 lime
  • 100ml warm water
  • 1 tbsp neutral oil
  • 2 spring onions, sliced
  • handful crushed peanuts
  • small handful coriander

Instructions

  1. Whisk the peanut butter, soy, sweet chilli, ginger, garlic, lime and warm water into a smooth satay sauce.
  2. Cook the noodles, then drain and set aside.
  3. Stir-fry the sliced chicken in hot oil for 5 to 6 min until golden and cooked through.
  4. Pour in the satay sauce and let it bubble and coat the chicken.
  5. Toss through the noodles and finish with spring onion, crushed peanuts and coriander.
