Peanut Satay Chicken Noodles, All One Pan by Maxy69838

Creamy peanut satay chicken tossed through noodles in one pan.

Ingredients
- 2 chicken breasts, sliced
- 200g egg noodles
- 3 tbsp peanut butter
- 1 tbsp soy sauce
- 1 tbsp sweet chilli sauce
- 1 tsp grated ginger
- 1 garlic clove, minced
- juice of 1 lime
- 100ml warm water
- 1 tbsp neutral oil
- 2 spring onions, sliced
- handful crushed peanuts
- small handful coriander
Instructions
- Whisk the peanut butter, soy, sweet chilli, ginger, garlic, lime and warm water into a smooth satay sauce.
- Cook the noodles, then drain and set aside.
- Stir-fry the sliced chicken in hot oil for 5 to 6 min until golden and cooked through.
- Pour in the satay sauce and let it bubble and coat the chicken.
- Toss through the noodles and finish with spring onion, crushed peanuts and coriander.
