Marry Me Chicken That Earns Its Name by Maxy69838

Seared chicken in a creamy sun-dried tomato and parmesan sauce, all in one pan.

Ingredients

  • 4 chicken breasts
  • salt and black pepper
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 4 garlic cloves, minced
  • 100g sun-dried tomatoes, sliced
  • 1 tsp dried oregano
  • 1/2 tsp chilli flakes
  • 300ml chicken stock
  • 200ml double cream
  • 40g grated parmesan
  • fresh basil to finish

Instructions

  1. Season the chicken well and sear in the oil and butter over medium-high heat for 4-5 min a side until golden, then lift out onto a plate.
  2. Lower the heat, add the garlic and sun-dried tomatoes and cook 1 min, then stir in the oregano and chilli flakes.
  3. Pour in the stock and cream, add the parmesan and let it bubble for 3-4 min until the sauce thickens.
  4. Nestle the chicken back into the sauce and simmer 8-10 min until cooked through and the sauce is glossy.
  5. Season to taste, scatter over torn basil, and serve straight from the pan.
