Seared chicken in a creamy sun-dried tomato and parmesan sauce, all in one pan.

Ingredients
- 4 chicken breasts
- salt and black pepper
- 1 tbsp olive oil
- 1 tbsp butter
- 4 garlic cloves, minced
- 100g sun-dried tomatoes, sliced
- 1 tsp dried oregano
- 1/2 tsp chilli flakes
- 300ml chicken stock
- 200ml double cream
- 40g grated parmesan
- fresh basil to finish
Instructions
- Season the chicken well and sear in the oil and butter over medium-high heat for 4-5 min a side until golden, then lift out onto a plate.
- Lower the heat, add the garlic and sun-dried tomatoes and cook 1 min, then stir in the oregano and chilli flakes.
- Pour in the stock and cream, add the parmesan and let it bubble for 3-4 min until the sauce thickens.
- Nestle the chicken back into the sauce and simmer 8-10 min until cooked through and the sauce is glossy.
- Season to taste, scatter over torn basil, and serve straight from the pan.
