Loaded Grilled Potato Skins, Ready Before the Coals Cool by Maxy69838

Crispy grilled potato skins loaded with melted cheddar, bacon and sour cream.

Ingredients

  • 4 large baking potatoes, par-cooked
  • 2 tbsp olive oil
  • 150g mature cheddar, grated
  • 4 rashers smoked bacon, cooked and chopped
  • 100g sour cream
  • 2 spring onions, sliced
  • 1 tsp smoked paprika
  • salt and black pepper
  • 1 small handful chives, snipped

Instructions

  1. Halve the par-cooked potatoes and scoop out most of the middle, leaving a sturdy shell.
  2. Brush the skins inside and out with olive oil and season with salt, pepper and smoked paprika.
  3. Grill cut side down over the coals until crisp and golden, then flip.
  4. Fill each skin with grated cheddar and chopped bacon and grill until the cheese melts and bubbles.
  5. Top with sour cream, spring onion and chives, and serve hot.
