Crispy grilled potato skins loaded with melted cheddar, bacon and sour cream.

Ingredients
- 4 large baking potatoes, par-cooked
- 2 tbsp olive oil
- 150g mature cheddar, grated
- 4 rashers smoked bacon, cooked and chopped
- 100g sour cream
- 2 spring onions, sliced
- 1 tsp smoked paprika
- salt and black pepper
- 1 small handful chives, snipped
Instructions
- Halve the par-cooked potatoes and scoop out most of the middle, leaving a sturdy shell.
- Brush the skins inside and out with olive oil and season with salt, pepper and smoked paprika.
- Grill cut side down over the coals until crisp and golden, then flip.
- Fill each skin with grated cheddar and chopped bacon and grill until the cheese melts and bubbles.
- Top with sour cream, spring onion and chives, and serve hot.
