Lamb Chops With Chimichurri, On the Table in 20 by Maxy69838

Char-grilled lamb chops topped with a fresh herby chimichurri.

Ingredients

  • 8 lamb chops
  • 2 tbsp olive oil (for the chops)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 large bunch flat-leaf parsley
  • 3 garlic cloves
  • 1 red chilli
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 6 tbsp olive oil (for the chimichurri)

Instructions

  1. Finely chop the parsley, garlic and chilli, then stir through the vinegar, oregano and olive oil to make the chimichurri.
  2. Rub the lamb chops with olive oil, salt and pepper.
  3. Grill the chops over hot coals for a couple of minutes a side until charred outside and pink within.
  4. Rest the chops for 5 min on the board.
  5. Spoon the chimichurri generously over the top and serve.
