Lamb Chops With Chimichurri, On the Table in 20 by Maxy69838

Char-grilled lamb chops topped with a fresh herby chimichurri.

Ingredients
- 8 lamb chops
- 2 tbsp olive oil (for the chops)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 large bunch flat-leaf parsley
- 3 garlic cloves
- 1 red chilli
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- 6 tbsp olive oil (for the chimichurri)
Instructions
- Finely chop the parsley, garlic and chilli, then stir through the vinegar, oregano and olive oil to make the chimichurri.
- Rub the lamb chops with olive oil, salt and pepper.
- Grill the chops over hot coals for a couple of minutes a side until charred outside and pink within.
- Rest the chops for 5 min on the board.
- Spoon the chimichurri generously over the top and serve.
