Spiced lamb mince koftas on skewers, charred over coals with rose harissa.

Ingredients
- 500g lamb mince
- 2 tbsp rose harissa
- 1 small onion, grated
- 2 cloves garlic, crushed
- 1 tsp ground cumin
- 1 tsp ground coriander
- small handful flat-leaf parsley, chopped
- small handful mint, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil (for the grate)
- lemon wedges, to serve
Instructions
- Mix the lamb mince with the harissa, grated onion, garlic, cumin, coriander, herbs, salt and pepper until well combined.
- Shape into sausage-like koftas and press firmly around metal skewers.
- Oil the grate and grill over hot coals, turning every few minutes, for about 10 to 12 minutes until charred and cooked through.
- Rest for a couple of minutes off the heat.
- Serve with lemon wedges and an extra spoon of harissa.
