Harissa Lamb Kofta That Disappear First by Maxy69838

Spiced lamb mince koftas on skewers, charred over coals with rose harissa.

Ingredients

  • 500g lamb mince
  • 2 tbsp rose harissa
  • 1 small onion, grated
  • 2 cloves garlic, crushed
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • small handful flat-leaf parsley, chopped
  • small handful mint, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil (for the grate)
  • lemon wedges, to serve

Instructions

  1. Mix the lamb mince with the harissa, grated onion, garlic, cumin, coriander, herbs, salt and pepper until well combined.
  2. Shape into sausage-like koftas and press firmly around metal skewers.
  3. Oil the grate and grill over hot coals, turning every few minutes, for about 10 to 12 minutes until charred and cooked through.
  4. Rest for a couple of minutes off the heat.
  5. Serve with lemon wedges and an extra spoon of harissa.
