Crispy Chilli Halloumi, My High-Protein Hero by Maxy69838

Crispy chilli-glazed halloumi over roasted veg and grains. High protein, all veg.

Ingredients
- 1 block halloumi (225g), sliced
- 1 red pepper, chopped
- 1 courgette, chopped
- 1 red onion, in wedges
- 250g cooked quinoa or bulgur wheat
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tbsp honey
- 1 tsp chilli flakes
- juice of 1/2 lemon
- small handful parsley
- salt, black pepper
Instructions
- Toss the pepper, courgette and onion with olive oil, smoked paprika, salt and pepper and roast at 200C for 20 min.
- Pan-fry the halloumi slices for 2 min each side until deep golden and crisp.
- Warm the honey with the chilli flakes and spoon it over the halloumi to glaze.
- Pile the warm grains into bowls with the roasted veg.
- Top with the chilli halloumi, a squeeze of lemon and a scatter of parsley.
