Crispy Chilli Halloumi, My High-Protein Hero by Maxy69838

Crispy chilli-glazed halloumi over roasted veg and grains. High protein, all veg.

Ingredients

  • 1 block halloumi (225g), sliced
  • 1 red pepper, chopped
  • 1 courgette, chopped
  • 1 red onion, in wedges
  • 250g cooked quinoa or bulgur wheat
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tbsp honey
  • 1 tsp chilli flakes
  • juice of 1/2 lemon
  • small handful parsley
  • salt, black pepper

Instructions

  1. Toss the pepper, courgette and onion with olive oil, smoked paprika, salt and pepper and roast at 200C for 20 min.
  2. Pan-fry the halloumi slices for 2 min each side until deep golden and crisp.
  3. Warm the honey with the chilli flakes and spoon it over the halloumi to glaze.
  4. Pile the warm grains into bowls with the roasted veg.
  5. Top with the chilli halloumi, a squeeze of lemon and a scatter of parsley.
