Creamy Tomato Spinach Orzo One Pan by Maxy69838

Silky one-pan orzo with tinned tomatoes, cream cheese, and spinach ready in 20 minutes.

Ingredients

  • 200g orzo
  • 1 tin (400g) chopped tomatoes
  • 500ml vegetable or chicken stock
  • 2 handfuls fresh spinach
  • 3 tbsp cream cheese
  • 30g parmesan, finely grated
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp chili flakes
  • small handful fresh basil leaves
  • 1 tbsp olive oil
  • salt and black pepper to taste

Instructions

  1. Heat olive oil in a wide pan over medium heat. Add diced onion and cook for 3–4 minutes until softened and translucent.
  2. Add minced garlic and chilli flakes, stir for 30 seconds until fragrant.
  3. Add the orzo and toast for 1–2 minutes, stirring constantly, until lightly golden.
  4. Pour in the tinned tomatoes and stock. Stir well, bring to a simmer, then cook uncovered for 10–12 minutes, stirring every couple of minutes, until the orzo is al dente and most of the liquid is absorbed.
  5. Remove the pan from the heat. Stir in cream cheese, grated parmesan, and spinach until the spinach wilts and the sauce is creamy.
  6. Season with salt and pepper, scatter over fresh basil, and serve straight from the pan.
