Creamy Tomato Spinach Orzo One Pan by Maxy69838

Silky one-pan orzo with tinned tomatoes, cream cheese, and spinach ready in 20 minutes.

Ingredients
- 200g orzo
- 1 tin (400g) chopped tomatoes
- 500ml vegetable or chicken stock
- 2 handfuls fresh spinach
- 3 tbsp cream cheese
- 30g parmesan, finely grated
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 tsp chili flakes
- small handful fresh basil leaves
- 1 tbsp olive oil
- salt and black pepper to taste
Instructions
- Heat olive oil in a wide pan over medium heat. Add diced onion and cook for 3–4 minutes until softened and translucent.
- Add minced garlic and chilli flakes, stir for 30 seconds until fragrant.
- Add the orzo and toast for 1–2 minutes, stirring constantly, until lightly golden.
- Pour in the tinned tomatoes and stock. Stir well, bring to a simmer, then cook uncovered for 10–12 minutes, stirring every couple of minutes, until the orzo is al dente and most of the liquid is absorbed.
- Remove the pan from the heat. Stir in cream cheese, grated parmesan, and spinach until the spinach wilts and the sauce is creamy.
- Season with salt and pepper, scatter over fresh basil, and serve straight from the pan.
