Lemon and oregano chicken thigh skewers, grilled over coals and served with tzatziki.

Ingredients
- 600g chicken thigh, diced
- 3 tbsp olive oil
- juice of 1 lemon
- 3 cloves garlic, crushed
- 1 tbsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 200g Greek yoghurt (for the tzatziki)
- 1/2 cucumber, grated and squeezed
- 1 clove garlic, crushed (for the tzatziki)
- 1 tbsp chopped dill
- squeeze of lemon (for the tzatziki)
Instructions
- Toss the diced chicken thigh with the olive oil, lemon juice, garlic, oregano, salt and pepper and leave to marinate while you light the grill.
- Thread the chicken onto metal skewers, packing the pieces close together.
- Grill over hot coals, turning, for about 10 to 12 minutes until charred and cooked through.
- Mix the yoghurt with the grated cucumber, garlic, dill and a squeeze of lemon for the tzatziki.
- Rest the skewers briefly, then serve with the tzatziki and lemon wedges.
