Chicken Souvlaki I Make Every Warm Weekend by Maxy69838

Lemon and oregano chicken thigh skewers, grilled over coals and served with tzatziki.

Ingredients

  • 600g chicken thigh, diced
  • 3 tbsp olive oil
  • juice of 1 lemon
  • 3 cloves garlic, crushed
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 200g Greek yoghurt (for the tzatziki)
  • 1/2 cucumber, grated and squeezed
  • 1 clove garlic, crushed (for the tzatziki)
  • 1 tbsp chopped dill
  • squeeze of lemon (for the tzatziki)

Instructions

  1. Toss the diced chicken thigh with the olive oil, lemon juice, garlic, oregano, salt and pepper and leave to marinate while you light the grill.
  2. Thread the chicken onto metal skewers, packing the pieces close together.
  3. Grill over hot coals, turning, for about 10 to 12 minutes until charred and cooked through.
  4. Mix the yoghurt with the grated cucumber, garlic, dill and a squeeze of lemon for the tzatziki.
  5. Rest the skewers briefly, then serve with the tzatziki and lemon wedges.
