Charred Corn Ribs With Chilli-Lime Butter, My Party Trick by Maxy69838

Corn cobs quartered into ribs, charred over coals and brushed with chilli-lime butter.

Ingredients
- 4 corn cobs
- 60g butter, softened
- 1 lime, zest and juice
- 1/2 tsp chilli flakes
- 1/2 tsp smoked paprika
- 1 clove garlic, crushed
- 1 tsp salt
- 1 tbsp olive oil
- small handful coriander, chopped
- crumbled feta, to serve
Instructions
- Microwave the whole cobs for a couple of minutes to soften, then carefully quarter them lengthways into corn ribs.
- Mash the softened butter with the lime zest, chilli flakes, smoked paprika, garlic and salt.
- Brush the corn ribs with olive oil and grill over hot coals, turning, for about 10 to 12 minutes until charred and curling.
- Brush the hot corn ribs generously with the chilli-lime butter so it melts in.
- Squeeze over lime juice and finish with coriander and crumbled feta.
