Ingredients

  • 1 side of salmon (about 500g), skin on
  • 2 tbsp white miso paste
  • 1 tbsp mirin
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp grated ginger
  • 1 cedar plank, soaked in water for 1 hour
  • 1 spring onion, sliced (to serve)
  • 1 tsp sesame seeds (to serve)

Instructions

  1. Soak the cedar plank in water for at least an hour so it smokes instead of burning.
  2. Whisk the miso, mirin, soy, honey and ginger into a smooth glaze.
  3. Sit the salmon skin-side down on the soaked plank and spread the miso glaze over the top.
  4. Set the plank on the grill grate over medium coals, close the lid and cook about 15 to 18 minutes until just set.
  5. Scatter with spring onion and sesame seeds and serve straight off the plank.
