Peppery seared beef and crisp broccoli in a glossy stir-fry sauce, over rice.

Ingredients

  • 300g sirloin or rump steak, thinly sliced
  • 1 head broccoli, in small florets
  • 3 garlic cloves, minced
  • thumb of ginger, grated
  • 3 spring onions, sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1 1/2 tsp coarsely ground black pepper
  • 1 tbsp cornflour
  • 2 tbsp neutral oil
  • cooked rice to serve

Instructions

  1. Toss the sliced beef with the cornflour and a splash of the soy, and leave it while you prep everything else.
  2. Blanch or steam the broccoli for 2 min until just tender and bright green, then drain.
  3. Sear the beef in hot oil in a single layer for a minute, then stir-fry until browned and remove from the wok.
  4. Fry the garlic, ginger and black pepper for 30 sec, then add the soy, oyster sauce, sugar and a splash of water.
  5. Return the beef and broccoli, toss to coat in the glossy sauce, scatter the spring onions and serve over rice.
