Peppery seared beef and crisp broccoli in a glossy stir-fry sauce, over rice.

Ingredients
- 300g sirloin or rump steak, thinly sliced
- 1 head broccoli, in small florets
- 3 garlic cloves, minced
- thumb of ginger, grated
- 3 spring onions, sliced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1 1/2 tsp coarsely ground black pepper
- 1 tbsp cornflour
- 2 tbsp neutral oil
- cooked rice to serve
Instructions
- Toss the sliced beef with the cornflour and a splash of the soy, and leave it while you prep everything else.
- Blanch or steam the broccoli for 2 min until just tender and bright green, then drain.
- Sear the beef in hot oil in a single layer for a minute, then stir-fry until browned and remove from the wok.
- Fry the garlic, ginger and black pepper for 30 sec, then add the soy, oyster sauce, sugar and a splash of water.
- Return the beef and broccoli, toss to coat in the glossy sauce, scatter the spring onions and serve over rice.
