Thinly sliced, stacked beef seared to a crisp, golden finish for a multi-layered texture.

Ingredients

  • 450g (1 lb) ribeye or sirloin steak, thinly shaved
  • 1 tbsp neutral oil (grapeseed or canola)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper, freshly cracked
  • 1 tbsp unsalted butter

Instructions

  1. Slice the beef into extremely thin, uniform ribbons or sheets using a sharp knife.
  2. Stack the thin slices on top of each other to create a tall, layered 'monster' block.
  3. Season the exterior of the stacked beef generously with kosher salt and black pepper.
  4. Heat the oil in a heavy-bottomed cast iron skillet over high heat until just smoking.
  5. Place the beef stack into the skillet and sear for 3-4 minutes per side, pressing down firmly to ensure even contact and browning.
  6. Add the butter during the final minute of cooking, basting the edges of the stack until crispy and deep brown.
  7. Remove from the pan and let rest for 3 minutes before slicing into portions.
