Serves: 2Prep: 15 minCook: 10 min
Ingredients
- 450g (1 lb) ribeye or sirloin steak, thinly shaved
- 1 tbsp neutral oil (grapeseed or canola)
- 1 tsp kosher salt
- 1/2 tsp black pepper, freshly cracked
- 1 tbsp unsalted butter
Instructions
- Slice the beef into extremely thin, uniform ribbons or sheets using a sharp knife.
- Stack the thin slices on top of each other to create a tall, layered 'monster' block.
- Season the exterior of the stacked beef generously with kosher salt and black pepper.
- Heat the oil in a heavy-bottomed cast iron skillet over high heat until just smoking.
- Place the beef stack into the skillet and sear for 3-4 minutes per side, pressing down firmly to ensure even contact and browning.
- Add the butter during the final minute of cooking, basting the edges of the stack until crispy and deep brown.
- Remove from the pan and let rest for 3 minutes before slicing into portions.
