Thai Basil Beef Stir Fry by Matthinkamp

Savory, spicy ground beef stir-fried with aromatic Thai basil and garlic, served over fragrant jasmine rice.

Ingredients
- 450g (1 lb) ground beef
- 3 cup cooked jasmine rice
- 4 cloves garlic, minced
- 3 thai chilies, finely chopped
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tsp brown sugar
- 1 cup fresh holy basil or thai basil leaves
- 2 tbsp neutral oil
- 3 large eggs (for frying)
Instructions
- Whisk together the fish sauce, soy sauce, and brown sugar in a small bowl and set aside.
- Heat 1 tablespoon of oil in a wok or large skillet over high heat until shimmering.
- Add the ground beef and cook, breaking it up with a spatula, for 5–7 minutes until browned and crispy.
- Add the minced garlic and Thai chilies to the pan and stir-fry for 1 minute until fragrant.
- Pour the sauce mixture over the beef and stir-fry for 2 minutes to glaze the meat.
- Remove from heat and fold in the fresh basil leaves until wilted, about 30 seconds.
- In a separate small pan, heat the remaining tablespoon of oil over medium-high heat and fry the eggs until the edges are crispy and the yolks are still runny, about 2–3 minutes.
- Serve the beef over bowls of jasmine rice and top each with a crispy fried egg.
