Thai Basil Beef Stir Fry by Matthinkamp

Savory, spicy ground beef stir-fried with aromatic Thai basil and garlic, served over fragrant jasmine rice.

Ingredients

  • 450g (1 lb) ground beef
  • 3 cup cooked jasmine rice
  • 4 cloves garlic, minced
  • 3 thai chilies, finely chopped
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tsp brown sugar
  • 1 cup fresh holy basil or thai basil leaves
  • 2 tbsp neutral oil
  • 3 large eggs (for frying)

Instructions

  1. Whisk together the fish sauce, soy sauce, and brown sugar in a small bowl and set aside.
  2. Heat 1 tablespoon of oil in a wok or large skillet over high heat until shimmering.
  3. Add the ground beef and cook, breaking it up with a spatula, for 5–7 minutes until browned and crispy.
  4. Add the minced garlic and Thai chilies to the pan and stir-fry for 1 minute until fragrant.
  5. Pour the sauce mixture over the beef and stir-fry for 2 minutes to glaze the meat.
  6. Remove from heat and fold in the fresh basil leaves until wilted, about 30 seconds.
  7. In a separate small pan, heat the remaining tablespoon of oil over medium-high heat and fry the eggs until the edges are crispy and the yolks are still runny, about 2–3 minutes.
  8. Serve the beef over bowls of jasmine rice and top each with a crispy fried egg.
