Classic Swedish Toast Skagen by Matmackan

Refined Swedish open-faced sandwich featuring chilled shrimp salad, fresh dill, and delicate whitefish roe.

Ingredients
- 4 slices white bread, crusts removed
- 400g (14 oz) peeled shrimp, roughly chopped
- 1 cup homemade mayonnaise (see below)
- 1 tbsp fresh horseradish, finely grated
- 3 tbsp fresh dill, finely chopped
- 4 tbsp whitefish roe (löjrom)
- 1 tsp lemon juice
- 2 large eggs (for mayonnaise)
- 1 tsp dijon mustard (for mayonnaise)
- 1 tsp champagne vinegar (for mayonnaise)
- 0.25 tsp msg (for mayonnaise)
- 0.25 tsp salt (for mayonnaise)
- 200ml neutral oil (for mayonnaise)
Instructions
- Prepare the mayonnaise by whisking eggs, mustard, vinegar, MSG, and salt in a bowl; slowly drizzle in oil while whisking constantly until thick and emulsified.
- Combine the chopped shrimp, 1 cup of the prepared mayonnaise, grated horseradish, chopped dill, and lemon juice in a mixing bowl until well incorporated.
- Toast the bread slices in a pan with a little butter over medium heat for 2-3 minutes per side until golden brown and crisp.
- Divide the shrimp mixture evenly among the toasted bread slices.
- Top each serving with a generous tablespoon of whitefish roe and a sprig of fresh dill before serving immediately.
