Classic Chicken Club Sandwich by Matmackan

Crispy bacon and tender chicken layered with fresh lettuce, tomato, and a savory parmesan mustard sauce.

Ingredients

  • 3 slices pan de mie (white sandwich bread)
  • 150g (5 oz) chicken thigh fillets
  • 3 strips bacon
  • 2 leaves iceberg lettuce
  • 1 medium tomato, sliced
  • 3 tbsp mayonnaise (for sauce)
  • 1 tsp dijon mustard (for sauce)
  • 2 tbsp parmesan cheese, grated (for sauce)
  • 1 tbsp butter or oil (for frying)

Instructions

  1. Whisk together the mayonnaise, dijon mustard, and grated parmesan in a small bowl until smooth and set aside.
  2. Season the chicken thigh fillets with salt and pepper, then pan-fry in a skillet over medium-high heat for 5-6 minutes per side until golden and cooked through.
  3. Fry the bacon in the same skillet over medium heat for 3-4 minutes until crispy, then remove and drain on a paper towel.
  4. Toast the bread slices in a toaster or pan until lightly golden.
  5. Assemble the sandwich by spreading the sauce on two slices of bread, then layering with lettuce, tomato, bacon, and chicken.
  6. Place the third slice of bread in the center, cut diagonally into quarters, and secure with toothpicks.
