Classic Chicken Club Sandwich by Matmackan

Crispy bacon and tender chicken layered with fresh lettuce, tomato, and a savory parmesan mustard sauce.

Ingredients
- 3 slices pan de mie (white sandwich bread)
- 150g (5 oz) chicken thigh fillets
- 3 strips bacon
- 2 leaves iceberg lettuce
- 1 medium tomato, sliced
- 3 tbsp mayonnaise (for sauce)
- 1 tsp dijon mustard (for sauce)
- 2 tbsp parmesan cheese, grated (for sauce)
- 1 tbsp butter or oil (for frying)
Instructions
- Whisk together the mayonnaise, dijon mustard, and grated parmesan in a small bowl until smooth and set aside.
- Season the chicken thigh fillets with salt and pepper, then pan-fry in a skillet over medium-high heat for 5-6 minutes per side until golden and cooked through.
- Fry the bacon in the same skillet over medium heat for 3-4 minutes until crispy, then remove and drain on a paper towel.
- Toast the bread slices in a toaster or pan until lightly golden.
- Assemble the sandwich by spreading the sauce on two slices of bread, then layering with lettuce, tomato, bacon, and chicken.
- Place the third slice of bread in the center, cut diagonally into quarters, and secure with toothpicks.
