Traditional Rose-Flavored Turkish Delight by Maryc129

Translucent, chewy confection infused with delicate rose water and dusted in a fine sugar coating.

Ingredients

  • 700g (3 1/2 cup) granulated sugar
  • 475ml (2 cup) water
  • 1 tbsp lemon juice
  • 125g (1 cup) cornstarch
  • 1 tsp cream of tartar
  • 1 tbsp rose water
  • 1/2 cup powdered sugar (for coating)

Instructions

  1. Combine sugar, 1 1/2 cups of water, and lemon juice in a saucepan over medium heat, stirring until sugar dissolves, then boil for 5 minutes.
  2. Whisk cornstarch, cream of tartar, and remaining 1/2 cup water in a separate bowl until smooth.
  3. Slowly pour the cornstarch mixture into the boiling syrup, whisking constantly until thickened, about 5-8 minutes.
  4. Reduce heat to low and simmer for 45-60 minutes, stirring occasionally, until the mixture is thick, sticky, and pale yellow.
  5. Stir in the rose water, then pour the mixture into a parchment-lined 8x8 inch pan and let it set at room temperature for at least 4 hours.
  6. Turn the set block onto a surface dusted with powdered sugar, cut into 1-inch cubes, and toss to coat evenly.
