Decadent hybrid of fudgy brownie and chewy cookie topped with toasted marshmallows and graham crackers.

Ingredients
- 65g unsalted butter, very soft
- 70g light brown sugar
- 25g caster sugar
- 1 small egg
- 1 tsp vanilla extract
- 95g all-purpose flour
- 2g baking soda
- 2g salt
- 150g brownie batter (prepared)
- 50g mini marshmallows
- 2 graham crackers, broken into pieces
Instructions
- Preheat your oven to 180°C (350°F) and grease an 8-inch square baking pan.
- Cream together the soft butter, brown sugar, and caster sugar in a bowl until light and fluffy, about 3 minutes.
- Beat in the egg and vanilla extract until fully incorporated, about 1 minute.
- Fold in the flour, baking soda, and salt until just combined into a cookie dough.
- Spread the cookie dough evenly into the bottom of the prepared pan until ready to serve.
- Pour the brownie batter over the cookie dough layer, smoothing the top with a spatula until ready to serve.
- Bake for 20-25 minutes until the edges are set and a toothpick inserted into the center comes out with moist crumbs.
- Remove from oven, scatter the marshmallows and graham cracker pieces on top, and return to the oven for 2-3 minutes until marshmallows are golden and toasted.
