Ingredients

  • 450g (1 lb) large shrimp, peeled and deveined
  • 350g (12 oz) penne or fettuccine pasta
  • 2 tbsp cajun seasoning
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 240ml (1 cup) heavy cream
  • 50g (1/2 cup) parmesan cheese, freshly grated
  • 1 tbsp fresh parsley, chopped (for garnish)
  • 1 tbsp olive oil

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package directions until al dente; drain and set aside.
  2. Toss the shrimp in a bowl with 1 tablespoon of Cajun seasoning until evenly coated.
  3. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat; sear shrimp for 2-3 minutes per side until pink and opaque, then remove from skillet.
  4. Add remaining 2 tablespoons of butter to the same skillet, stir in minced garlic and cook for 1 minute until fragrant.
  5. Pour in the heavy cream and remaining 1 tablespoon of Cajun seasoning, simmering for 3-4 minutes until slightly thickened.
  6. Stir in the parmesan cheese until melted and smooth, then return the shrimp to the pan.
  7. Add the cooked pasta to the sauce, tossing thoroughly for 1-2 minutes to coat, then serve immediately garnished with parsley.
