Ingredients

  • 450g (1 lb) cooked chicken breast, shredded
  • 1/2 cup creamy peanut butter
  • 2 tbsp lime juice
  • 1 tbsp fresh ginger, grated
  • 1 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 2 tbsp warm water (to thin dressing)
  • 1 cup red cabbage, thinly sliced
  • 1/2 cup carrots, julienned
  • 1/4 cup green onions, sliced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Whisk together peanut butter, lime juice, grated ginger, soy sauce, and honey in a small bowl until smooth.
  2. Add warm water one tablespoon at a time to the dressing until it reaches a pourable, creamy consistency.
  3. Combine the shredded chicken, sliced cabbage, carrots, green onions, and cilantro in a large mixing bowl.
  4. Pour the dressing over the chicken mixture and toss thoroughly until every piece is evenly coated.
  5. Serve immediately or chill for 30 minutes to allow the flavors to meld.
