- 450g (1 lb) cooked chicken breast, shredded
- 1/2 cup creamy peanut butter
- 2 tbsp lime juice
- 1 tbsp fresh ginger, grated
- 1 tbsp soy sauce
- 1 tbsp honey or maple syrup
- 2 tbsp warm water (to thin dressing)
- 1 cup red cabbage, thinly sliced
- 1/2 cup carrots, julienned
- 1/4 cup green onions, sliced
- 1/4 cup fresh cilantro, chopped
Instructions
- Whisk together peanut butter, lime juice, grated ginger, soy sauce, and honey in a small bowl until smooth.
- Add warm water one tablespoon at a time to the dressing until it reaches a pourable, creamy consistency.
- Combine the shredded chicken, sliced cabbage, carrots, green onions, and cilantro in a large mixing bowl.
- Pour the dressing over the chicken mixture and toss thoroughly until every piece is evenly coated.
- Serve immediately or chill for 30 minutes to allow the flavors to meld.
