Italian sausage and potato gnocchi simmered in a rich, creamy broth with fresh spinach and parmesan.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 lb italian sausage
  • 2 tbsp tomato paste
  • 4 cup chicken broth
  • 1 lb potato gnocchi
  • 2 cup fresh spinach
  • 0.5 cup heavy cream
  • 0.5 cup parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add onion and garlic, sautéing until fragrant, about 3 minutes.
  2. Add Italian sausage and tomato paste to the pot. Cook, breaking up the meat with a spoon, until browned and the paste is caramelized, about 5-7 minutes.
  3. Pour in the chicken broth and bring to a gentle simmer over medium heat.
  4. Stir in the potato gnocchi and spinach. Cook for 3-5 minutes, or until the gnocchi float to the surface.
  5. Reduce heat to low and stir in the heavy cream and Parmesan cheese. Continue stirring until the soup is smooth and creamy.
  6. Remove from heat and serve hot, garnished with extra Parmesan and fresh parsley.
