Soft, thick-baked cookies loaded with chunks of white chocolate and crushed chocolate sandwich cookies.

Ingredients
- 225g (1 cup) unsalted butter, softened
- 150g (3/4 cup) granulated sugar
- 150g (3/4 cup) light brown sugar, packed
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 380g (3 cup) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 170g (1 cup) white chocolate chips
- 150g (1 1/2 cup) chocolate sandwich cookies, roughly chopped
Instructions
- Preheat your oven to 175°C (350°F) and line a large baking sheet with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar in a large bowl for 3 minutes until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract, mixing until fully incorporated.
- Whisk the flour, baking soda, and salt in a separate bowl, then gradually add to the wet ingredients until just combined.
- Fold in the white chocolate chips and chopped chocolate sandwich cookies by hand until evenly distributed.
- Scoop portions of dough into large balls (about 3 tablespoons each) and place on the prepared baking sheet.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are just set.
- Cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
