Mini Halloween Meatloaf Cups by Madisoneats

Savory bite-sized meatloaf cups topped with piped mashed potato ghosts and olive eyes.

Ingredients

  • 2 packets (approx. 20 oz) plant-based ground meat
  • 1 small white onion, finely minced
  • 6 tbsp liquid egg replacement
  • 1 cup breadcrumbs
  • 1 tbsp vegan worcestershire sauce
  • 1/4 tsp black pepper
  • 1/2 tsp seasoning salt
  • 1 tsp garlic powder
  • 3/4 cup ketchup, divided
  • 1/4 cup brown sugar
  • 2 tsp mustard
  • 2 cup mashed potatoes
  • 4 black olives, sliced for eyes

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 14-cup muffin tin with nonstick cooking spray.
  2. Combine the plant-based ground meat, minced onion, egg replacement, breadcrumbs, Worcestershire sauce, pepper, seasoning salt, garlic powder, and 1/2 cup of ketchup in a large bowl, mixing gently by hand.
  3. Divide the mixture evenly into the 14 muffin tin cups.
  4. Whisk the remaining 1/4 cup of ketchup, brown sugar, and mustard in a small bowl, then spread a thin layer over the top of each meatloaf cup.
  5. Bake for 30 minutes until fully cooked through, then let cool for 5 minutes.
  6. Pipe a swirl of mashed potatoes on top of each cup to form a ghost shape, then add sliced black olives for eyes and a mouth.
