Soft, thick-baked cookies loaded with chunks of white chocolate and crushed chocolate sandwich cookies.

Ingredients

  • 225g (1 cup) unsalted butter, softened
  • 150g (3/4 cup) granulated sugar
  • 150g (3/4 cup) light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 380g (3 cup) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 170g (1 cup) white chocolate chips
  • 150g (1 1/2 cup) chocolate sandwich cookies, roughly chopped

Instructions

  1. Preheat your oven to 175°C (350°F) and line a large baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar in a large bowl for 3 minutes until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract, mixing until fully incorporated.
  4. Whisk the flour, baking soda, and salt in a separate bowl, then gradually add to the wet ingredients until just combined.
  5. Fold in the white chocolate chips and chopped chocolate sandwich cookies by hand until evenly distributed.
  6. Scoop portions of dough into large balls (about 3 tablespoons each) and place on the prepared baking sheet.
  7. Bake for 10-12 minutes, or until the edges are golden brown and the centers are just set.
  8. Cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
