Christmas Tree Pancakes by Madisoneats

Ingredients

• 2 cup pancake mix
• 1 1/2 cup nondairy milk
• 1 tsp vanilla extract
• 1/2 tsp ground cinnamon
• 2 tbsp butter, divided (for the skillet)
• 1/2 cup powdered sugar icing
• 2 tbsp green sprinkles
• 1 tube red writing icing

Instructions

1. Whisk together the pancake mix, nondairy milk, vanilla extract, and cinnamon in a large bowl until the batter is smooth.
2. Place a tree-shaped metal cookie cutter in a lightly buttered skillet over medium heat and spray the inside of the cutter with nonstick oil.
3. Pour batter into the cookie cutter until about 3/4 full, cooking for 2-3 minutes until bubbles form on the surface.
4. Remove the cookie cutter carefully, flip the pancake, and cook for another 1-2 minutes until golden brown.
5. Repeat with the remaining batter, adding a small knob of butter to the skillet between batches as needed.
6. Dip the top half of each cooled pancake into the powdered sugar icing, sprinkle with green sprinkles, and use red writing icing to pipe garland details.
