Ingredients
- 1.4 kg (3 lbs) red potatoes
- 1 cup apple cider vinegar
- 1 tbsp dijon mustard
- 1 medium white onion, finely diced
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh chives, chopped
- 1/4 cup green onions, sliced
- 2 tbsp olive oil
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper
Instructions
- Boil the red potatoes in water for 20-25 minutes until just before fork-tender, then drain, cool slightly, peel, and slice thinly.
- Whisk together the apple cider vinegar and Dijon mustard in a microwave-safe bowl, then microwave for 30-90 seconds to warm through.
- Layer the potato slices in a large bowl or serving dish, seasoning each layer with salt, pepper, diced onions, parsley, chives, and green onions.
- Drizzle a few spoonfuls of the warm dressing over each layer as you build the salad to ensure even absorption.
- Cover the bowl with a plate and let the salad marinate at room temperature for at least 2 hours.
- Drizzle the olive oil over the salad just before serving, tossing gently to combine.
