Elote Grilled Caesar Salad with Steak by Madelinethekitchen
Charred baby gem lettuce topped with grilled corn, cotija cheese, and a zesty Tajin Caesar dressing.

Ingredients
- 2 heads baby gem lettuce, halved
- 2 ears corn on the cob
- 300g (10 oz) skirt steak, marinated
- 1 cup cherry tomatoes, halved
- 1/2 cup cotija cheese, crumbled
- 1/4 cup panko breadcrumbs, toasted
- 1/4 cup fresh cilantro, chopped
- 1/2 cup caesar dressing mixed with 1 tsp tajin
- 1 tbsp olive oil
- 1/2 tsp flaky sea salt
Instructions
- Preheat grill to medium-high heat.
- Grill corn and marinated steak for 6-8 minutes, turning occasionally, until the steak is cooked to desired doneness and corn is charred.
- Brush the halved lettuce heads with olive oil and sprinkle with flaky salt.
- Place lettuce cut-side down on the grill for 2 minutes until lightly charred but still crisp.
- Arrange the grilled lettuce on plates and top with charred corn kernels, halved cherry tomatoes, crumbled cotija cheese, and toasted panko breadcrumbs.
- Drizzle generously with the Tajin-infused Caesar dressing and garnish with fresh cilantro.
- Serve immediately with the grilled steak on the side.
