High-Protein Hot Honey 'Beef' Bowls by Maayan Moss

Plant-based ground beef served over roasted sweet potatoes with a creamy tofu and cottage cheese base.

Ingredients
- 2 large sweet potatoes
- 1 tbsp olive oil
- 1 cup tofu, extra firm
- 0.5 cup cottage cheese
- 8 oz plant-based ground 'beef'
- 1 tbsp taco seasoning
- 1 whole avocado
- 2 tbsp honey
- 1 tsp chili flakes
Instructions
- Preheat your oven to 400°F (200°C).
- Slice sweet potatoes in half lengthwise. Brush a baking sheet with olive oil and place potatoes face-down. Roast for 35-40 minutes until tender and caramelized.
- While potatoes roast, blend tofu and cottage cheese until smooth to create the creamy base.
- In a pan over medium heat, cook plant-based ground 'beef' with taco seasoning for 6-8 minutes until browned.
- In a small bowl, whisk together honey and chili flakes to create the hot honey
- Assemble the bowls by placing a roasted sweet potato half in each, topping with the seasoned 'beef', a dollop of the tofu-cottage cheese mixture, sliced avocado, and a drizzle of hot honey.
