Chicken Melt Breakfast by Lucianamedina

Ingredients

  • 2 cans (approx. 12 oz each) chicken, drained
  • 1/2 small red onion, finely diced
  • 1/4 cup mayonnaise
  • 1 tbsp dijon mustard
  • 1 tsp worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 4 slices cheese (e.g., cheddar or swiss)
  • 4 slices bread
  • 1 tbsp butter

Instructions

  1. In a medium bowl, combine the drained chicken, finely diced red onion, mayonnaise, dijon mustard, worcestershire sauce, garlic powder, and black pepper. Mix well until all ingredients are evenly distributed.
  2. Divide the chicken mixture evenly among 2 slices of bread, spreading it to the edges until ready to serve.
  3. Top each portion with 2 slices of cheese until ready to serve.
  4. Place the remaining 2 slices of bread on top to form sandwiches until ready to serve.
  5. Melt the butter in a non-stick skillet or griddle over medium heat.
  6. Carefully place the sandwiches in the skillet. Cook for 5-7 minutes per side, or until the bread is golden brown and toasted, and the cheese is melted and gooey.
  7. Remove from skillet, let cool slightly, and serve immediately until ready to serve.
