Butter Chicken Mac N Cheese by Lochan Nowacki

Tender chicken pieces folded into a creamy, spiced butter chicken sauce and cheesy macaroni pasta.

Ingredients

  • 450g (1 lb) chicken breast, cut into bite-sized pieces
  • 350g (12 oz) macaroni pasta
  • 2 cup butter chicken sauce (store-bought or homemade)
  • 2 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 2 tbsp unsalted butter
  • 1 tsp garam masala
  • 1/2 cup heavy cream

Instructions

  1. Boil a large pot of salted water and cook the macaroni according to package directions until al dente, about 8-10 minutes.
  2. Melt butter in a large skillet over medium-high heat and sear the chicken pieces until golden brown and cooked through, about 6-8 minutes.
  3. Pour the butter chicken sauce and heavy cream into the skillet with the chicken, stirring to combine, and simmer for 3-5 minutes.
  4. Drain the cooked macaroni and add it directly into the skillet with the sauce over medium heat until heated through, about 5 min.
  5. Fold in 1.5 cups of the cheddar and mozzarella cheese blend, stirring until melted and creamy, about 2 minutes.
  6. Transfer the mixture to a baking dish, top with the remaining cheese, and broil for 2-3 minutes until golden and bubbling.
