Ingredients

  • 1 cup cottage cheese
  • 2 slices sourdough bread
  • 1 jalapeño, thinly sliced
  • 2 tbsp finely diced red onion
  • 1/2 cup shredded cheddar cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp olive oil or butter, optional for toasting

Instructions

  1. Mix the cottage cheese, red onion, salt, and black pepper in a small bowl until combined, about 1 minute.
  2. Toast the sourdough until lightly golden, about 2 to 3 minutes in a toaster or skillet.
  3. Spread the cottage cheese mixture evenly over each slice of toast.
  4. Top with sliced jalapeño and shredded cheddar, covering the surface well.
  5. Air fry at 375°F for 3 to 5 minutes, or broil for 1 to 2 minutes, until the cheese is melted and bubbling.
