Fluffy Chickpea Pancakes (No Flour) by Liveeatlearn

Blender pancakes made with canned chickpeas, oats, and eggs for a high-protein, high-fiber breakfast.

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup rolled oats
  • 2 large eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 1 tsp baking powder
  • 1 tbsp maple syrup or honey (optional)
  • 1/2 tsp vanilla extract (optional)
  • Pinch of salt
  • Butter or oil for the pan

Instructions

  1. Add chickpeas, oats, eggs, milk, baking powder, salt, and optional maple syrup and vanilla to a blender. Blend on high for 30–60 seconds until completely smooth.
  2. Let the batter rest for 2–3 minutes while you heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
  3. Pour about 1/4 cup of batter per pancake onto the skillet. Cook for 2–3 minutes until bubbles form on the surface and the edges look set.
  4. Flip and cook for another 1–2 minutes until golden brown and cooked through. Repeat with remaining batter.
  5. Serve warm with your favorite toppings like maple syrup, fresh fruit, or yogurt.
