Fluffy Chickpea Pancakes (No Flour) by Liveeatlearn

Blender pancakes made with canned chickpeas, oats, and eggs for a high-protein, high-fiber breakfast.

Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup rolled oats
- 2 large eggs
- 1/2 cup milk (dairy or non-dairy)
- 1 tsp baking powder
- 1 tbsp maple syrup or honey (optional)
- 1/2 tsp vanilla extract (optional)
- Pinch of salt
- Butter or oil for the pan
Instructions
- Add chickpeas, oats, eggs, milk, baking powder, salt, and optional maple syrup and vanilla to a blender. Blend on high for 30–60 seconds until completely smooth.
- Let the batter rest for 2–3 minutes while you heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
- Pour about 1/4 cup of batter per pancake onto the skillet. Cook for 2–3 minutes until bubbles form on the surface and the edges look set.
- Flip and cook for another 1–2 minutes until golden brown and cooked through. Repeat with remaining batter.
- Serve warm with your favorite toppings like maple syrup, fresh fruit, or yogurt.
