Thin Crust Sourdough Discard Pizza by Littlespoonfarm

Ultra-crispy personal pan pizza made entirely from sourdough discard, topped with cheese and pepperoni.

Ingredients
- 3/4 cup unfed sourdough discard starter
- 1 tbsp neutral oil (for the pan)
- 1/4 cup pizza sauce
- 1/2 cup shredded mozzarella cheese
- 10-12 slices pepperoni
Instructions
- Adjust oven racks so the top rack sits about two positions below the broiler and the bottom rack can fit a cast iron skillet. Preheat oven to 450°F and place a cast iron skillet inside to heat for 15–20 minutes.
- Using oven gloves, carefully remove the hot skillet. Pour in about 1 tablespoon of oil and swirl or spread with a paper towel to coat the bottom evenly — do not use more than a tablespoon.
- Pour exactly 3/4 cup of unfed sourdough discard into the hot skillet and swirl to coat the entire bottom in a thin, even layer.
- Return the skillet to the oven and bake at 450°F for 10–15 minutes, until the crust is set and the edges begin to curl up slightly.
- Remove the skillet from the oven. Turn the oven off and switch the broiler to low.
- Quickly top the crust with pizza sauce, shredded mozzarella, and pepperoni slices.
- Place the skillet under the broiler for 1–2 minutes, watching closely, until the cheese is melted and bubbly and the pepperoni is crisped.
- Remove from the broiler, slide a spatula under the pizza, and transfer it to a sheet of parchment paper. Cut immediately and serve right away.
