Pumpkin Sourdough Waffles with Whipped Spiced Butter by Littlespoonfarm

Fluffy egg-free waffles made with pumpkin puree and sourdough discard, topped with whipped pumpkin spice butter.

Ingredients

  • 1 cup canned pumpkin puree (about half a 15 oz can)
  • 1 cup sourdough starter (discard or active)
  • 1 cup milk (regular or plant-based)
  • 4 tbsp butter, melted (regular or plant-based)
  • 1 tsp vanilla extract
  • 2 tbsp granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 tsp pumpkin pie spice (or cinnamon)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • Avocado oil spray, for the waffle iron
  • 4 tbsp butter, softened (for whipped butter topping)
  • 2 tbsp granulated sugar (for whipped butter topping)
  • 1/4 tsp pumpkin pie spice or cinnamon (for whipped butter topping)
  • Maple syrup, for serving

Instructions

  1. In a large bowl, combine the milk, sourdough starter, melted butter, and vanilla extract. Stir until well mixed.
  2. Add the granulated sugar to the wet ingredients and stir to combine.
  3. In a separate bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt until evenly incorporated.
  4. Pour the dry ingredients into the wet ingredients and stir until just combined, then switch to a whisk and mix until mostly smooth — the batter will be thick.
  5. Fold in the pumpkin puree and stir until fully incorporated. Let the batter rest while the waffle iron preheats.
  6. Preheat your waffle iron to a medium-high setting (level 6 recommended). Lightly spray with avocado oil before the first waffle.
  7. Pour about 3/4 to 1 cup of batter into the center of the waffle iron, close the lid, and cook until the indicator light signals done, about 4–5 minutes. Repeat with remaining batter without re-spraying each time.
  8. For the whipped spiced butter: melt the 4 tablespoons of softened butter slightly, stir in the sugar and pumpkin pie spice until the sugar dissolves, then chill in the freezer for several minutes until it begins to firm up.
  9. Whip the chilled butter mixture with a fork or hand mixer until light and fluffy. Taste and adjust sugar or spice as needed.
  10. Serve waffles hot topped with a dollop of whipped spiced butter and a drizzle of warm maple syrup.
