Ingredients
- ½ cup (1 stick) unsalted butter
- ¾ cup dark brown sugar
- ¼ cup granulated sugar
- 2 tsp vanilla extract
- 1 large egg
- 1 egg yolk
- ½ tsp baking soda
- ¼ tsp baking powder
- 1 tsp salt
- 1½ cups all-purpose flour
- ¾ cup chopped dark chocolate or chocolate chips
Instructions
- In a saucepan over medium heat, cook the butter, stirring frequently, until it turns golden brown and smells nutty, about 5–7 minutes. Remove from heat and let cool slightly.
- In a large bowl, whisk together the granulated sugar, dark brown sugar, salt, and browned butter until combined — the mixture will look grainy; break up any large lumps.
- Whisk in the egg, egg yolk, and vanilla extract until the mixture is smooth and ribbons form when the whisk is lifted, about 1–2 minutes.
- Sift in the flour, baking soda, and baking powder, then fold gently with a spatula until just combined. Do not overmix.
- Fold in the chopped chocolate. Scoop dough into balls (about 2 tablespoons each) and place on a parchment-lined baking sheet. Refrigerate for at least 30 minutes.
- Preheat oven to 350°F (175°C). Bake chilled cookies for 12–15 minutes, until edges are golden but centers still look slightly underdone.
- Let cookies cool on the baking sheet for 5 minutes before transferring — they will firm up as they cool.
