Sardine Tunacado Sandwich by Lit Tlechef

Creamy sardine salad with avocado, arugula, and tomato on crisp sourdough.

Ingredients

  • 1 tin sardines, drained
  • 1/2 lemon, juiced
  • 1 tbsp chives, chopped
  • 1 tbsp mayonnaise
  • 1/2 avocado
  • 2 slices sourdough or sandwich bread
  • 1 small handful arugula
  • 1 small tomato, thinly sliced
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

  1. Drain the sardines and mash them in a bowl with the lemon juice, chives, mayonnaise, salt, and black pepper for 1 minute until creamy but still a little chunky.
  2. Toast the bread for 2 to 3 minutes until lightly golden and crisp.
  3. Mash the avocado and spread it over one slice of bread, then season lightly with salt.
  4. Layer the sardine mixture, arugula, and tomato on top, then close the sandwich with the second slice.
  5. Press the sandwich gently, slice in half, and serve immediately while the bread is crisp and the filling is cool.
