Sardine Tunacado Sandwich by Lit Tlechef

Creamy sardine salad with avocado, arugula, and tomato on crisp sourdough.

Ingredients
- 1 tin sardines, drained
- 1/2 lemon, juiced
- 1 tbsp chives, chopped
- 1 tbsp mayonnaise
- 1/2 avocado
- 2 slices sourdough or sandwich bread
- 1 small handful arugula
- 1 small tomato, thinly sliced
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Drain the sardines and mash them in a bowl with the lemon juice, chives, mayonnaise, salt, and black pepper for 1 minute until creamy but still a little chunky.
- Toast the bread for 2 to 3 minutes until lightly golden and crisp.
- Mash the avocado and spread it over one slice of bread, then season lightly with salt.
- Layer the sardine mixture, arugula, and tomato on top, then close the sandwich with the second slice.
- Press the sandwich gently, slice in half, and serve immediately while the bread is crisp and the filling is cool.
