Traditional Pork, Shrimp, and Egg Chive Dumplings by Lillychilioil

Hand-folded dumplings filled with savory pork, fresh shrimp, and egg, seasoned with aromatic scallion oil.

Ingredients

  • 450g (1 lb) ground pork
  • 200g (7 oz) shrimp, peeled, deveined, and chopped
  • 3 large eggs, lightly scrambled and cooked
  • 2 cup fresh chives, finely chopped
  • 3 tbsp green onion oil
  • 1 tbsp oyster sauce
  • 1 tsp soy sauce
  • 1/2 tsp salt
  • 40 dumpling wrappers

Instructions

  1. Prepare the filling by combining ground pork, chopped shrimp, cooked scrambled eggs, and finely chopped chives in a large mixing bowl.
  2. Add the scallion oil, oyster sauce, soy sauce, and salt to the mixture; stir vigorously in one direction for 5 minutes until the mixture becomes sticky and cohesive.
  3. Place a spoonful of filling in the center of each dumpling wrapper; wet the edges with water and fold to seal, pleating as desired.
  4. Bring a large pot of water to a boil over high heat; add the dumplings in batches, ensuring they do not crowd the pot.
  5. Cook for 6-8 minutes, or until the dumplings float to the surface and the filling is cooked through.
  6. Remove with a slotted spoon and serve hot with a side of soy-vinegar dipping sauce.
