Traditional Pork, Shrimp, and Egg Chive Dumplings by Lillychilioil
Hand-folded dumplings filled with savory pork, fresh shrimp, and egg, seasoned with aromatic scallion oil.

Ingredients
- 450g (1 lb) ground pork
- 200g (7 oz) shrimp, peeled, deveined, and chopped
- 3 large eggs, lightly scrambled and cooked
- 2 cup fresh chives, finely chopped
- 3 tbsp green onion oil
- 1 tbsp oyster sauce
- 1 tsp soy sauce
- 1/2 tsp salt
- 40 dumpling wrappers
Instructions
- Prepare the filling by combining ground pork, chopped shrimp, cooked scrambled eggs, and finely chopped chives in a large mixing bowl.
- Add the scallion oil, oyster sauce, soy sauce, and salt to the mixture; stir vigorously in one direction for 5 minutes until the mixture becomes sticky and cohesive.
- Place a spoonful of filling in the center of each dumpling wrapper; wet the edges with water and fold to seal, pleating as desired.
- Bring a large pot of water to a boil over high heat; add the dumplings in batches, ensuring they do not crowd the pot.
- Cook for 6-8 minutes, or until the dumplings float to the surface and the filling is cooked through.
- Remove with a slotted spoon and serve hot with a side of soy-vinegar dipping sauce.
