Perfect Stir-Fried Chinese Leafy Vegetables by Lillychilioil
Crisp, vibrant Chinese greens stir-fried on high heat with aromatic garlic and a light seasoning.

Ingredients
- 450g (1 lb) chinese leafy vegetables (such as bok choy, gai-lan, or water spinach)
- 2 tbsp neutral cooking oil
- 3 cloves garlic, minced
- 1/2 tsp salt (adjust to taste)
Instructions
- Wash the vegetables thoroughly and ensure they are completely drained and dried to prevent soggy leaves.
- For thin-leaf varieties (like water spinach or napa cabbage), heat 1 tbsp oil in a wok or skillet over high heat.
- Add the minced garlic and stir-fry for 30 seconds until fragrant.
- Add the vegetables and stir-fry on high heat for 1 to 2 minutes until just wilted.
- Season with salt halfway through the cooking process and toss well to combine.
- For thick-leaf varieties (like gai-lan or bok choy), blanch in boiling water with 1 tbsp oil and a pinch of salt for 1.5 to 2 minutes before stir-frying briefly with garlic.
