10-Minute Quick Congee by Lillychilioil

Comforting, velvety rice porridge base prepared quickly from frozen or leftover cooked rice.

Ingredients

  • 200g (1 cup) frozen cooked rice or uncooked washed rice
  • 1 l (4 cup) water (adjust for desired consistency)
  • 1/2 tsp salt (optional, to taste)

Instructions

  1. Bring 1 liter of water to a rolling boil in a medium pot over high heat.
  2. Add the frozen or leftover rice to the boiling water, breaking up any large clumps with a spoon.
  3. Reduce heat to medium-high and cook uncovered for 8-10 minutes, stirring occasionally to prevent sticking.
  4. Continue cooking until the rice grains bloom and the mixture reaches a creamy, porridge-like consistency.
  5. Remove from heat and stir in desired toppings before serving.
