Crispy oven-baked gnocchi tossed with succulent shrimp, seasonal vegetables, and a creamy herb-infused sauce.

Ingredients

  • 750g gnocchi
  • 250g shrimp, peeled and deveined
  • 480g mixed vegetables (fresh or frozen)
  • 135g cream cheese
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Place the gnocchi, shrimp, and vegetables into a large baking dish until ready to serve.
  3. Add the olive oil, salt, and pepper to the dish and toss thoroughly until everything is evenly coated.
  4. Dollop the cream cheese over the mixture in small portions until ready to serve.
  5. Bake for 20-25 minutes, or until the gnocchi are golden and the shrimp are cooked through, stirring halfway through to incorporate the melting cream cheese.
