Crispy oven-baked gnocchi tossed with succulent shrimp, seasonal vegetables, and a creamy herb-infused sauce.

Ingredients
- 750g gnocchi
- 250g shrimp, peeled and deveined
- 480g mixed vegetables (fresh or frozen)
- 135g cream cheese
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat your oven to 200°C (400°F).
- Place the gnocchi, shrimp, and vegetables into a large baking dish until ready to serve.
- Add the olive oil, salt, and pepper to the dish and toss thoroughly until everything is evenly coated.
- Dollop the cream cheese over the mixture in small portions until ready to serve.
- Bake for 20-25 minutes, or until the gnocchi are golden and the shrimp are cooked through, stirring halfway through to incorporate the melting cream cheese.
