Creamy coconut and almond-infused oats inspired by the classic confection, served warm and satisfying.

Ingredients

  • 60g (2 oz) rolled oats
  • 3 tbsp shredded coconut
  • 1 tbsp almond butter
  • 250ml (1 cup) almond milk
  • 1 tsp maple syrup (optional)
  • 1/4 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Combine the oats, shredded coconut, almond milk, and salt in a small saucepan over medium heat.
  2. Cook for 5-7 minutes, stirring frequently, until the mixture thickens and the oats are soft.
  3. Remove from heat and stir in the almond butter and vanilla extract until fully incorporated.
  4. Transfer to a bowl and serve warm, adding maple syrup if extra sweetness is desired until ready to serve.
