One-Pot Ground Turkey Pasta by Lemons And Zest

Savory ground turkey and tender pasta simmered in a creamy tomato sauce with fresh baby spinach.

Ingredients

  • 1 lb ground turkey
  • 8 oz medium shell pasta, uncooked
  • 1 tbsp olive oil
  • 1/2 yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 14.5 oz crushed tomatoes
  • 2 3/4 cup chicken broth
  • 2 tsp italian seasoning
  • 1 tsp balsamic vinegar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 cup baby spinach
  • 2/3 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 2 tbsp fresh basil, chopped (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat; add onion and cook for 3-4 minutes until softened.
  2. Add ground turkey to the pot and cook, breaking it apart with a spoon, for 5-6 minutes until browned.
  3. Stir in minced garlic and tomato paste, cooking for 1 minute until fragrant.
  4. Add crushed tomatoes, chicken broth, Italian seasoning, balsamic vinegar, salt, pepper, and uncooked pasta, stirring to combine.
  5. Bring the mixture to a boil, then reduce to a simmer, cover, and cook for 10-12 minutes or until pasta is al dente.
  6. Remove the lid, stir in heavy cream, parmesan, and baby spinach, cooking for 2-3 minutes until the spinach is wilted and the sauce is creamy.
  7. Serve warm topped with fresh basil if desired.
