Baked Orange Chicken and Broccoli by Lemons And Zest

Tender chicken and crisp broccoli florets tossed in a zesty orange-honey glaze and oven-roasted.

Ingredients

  • 2 lb chicken tenderloins
  • 6 cup broccoli florets
  • 1/3 cup honey
  • 1 tbsp orange zest
  • 2 tbsp freshly squeezed orange juice
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1/4 tsp crushed red pepper
  • 3 tbsp olive oil, divided
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. Whisk together the honey, orange zest, orange juice, minced garlic, grated ginger, crushed red pepper, 1 tbsp olive oil, and salt in a small bowl to create the marinade
  3. Place the chicken tenderloins in a bowl or bag, pour half of the marinade over them, and toss to coat; let sit for 10-15 minutes if time permits.
  4. Toss the broccoli florets on the sheet pan with the remaining 2 tbsp olive oil, garlic powder, and a pinch of salt and pepper
  5. Arrange the marinated chicken on the sheet pan alongside the broccoli in a single layer.
  6. Bake for 18-20 minutes at 400°F, or until the chicken is cooked through and the broccoli is tender with slightly charred edges.
  7. Drizzle the remaining marinade over the finished dish before serving.
