DIY Dot Cakes with Sprinkle Designs by Leesondra

Mini confetti cakes decorated with hand-placed sprinkle designs including leopard print patterns.

Serves: 6Prep: 45 minCook: 20 min

Ingredients

  • 1 box confetti cake mix (plus ingredients listed on box: eggs, oil, water)
  • 1 can pre-made vanilla or white frosting/cream
  • 1/2 cup assorted sprinkles (various colors and shapes)
  • Black sprinkles or nonpareils for leopard print spots
  • Round sprinkles or dots for dot pattern
  • Parchment paper (for lining pans)

Instructions

  1. Prepare confetti cake batter according to box directions and bake in a muffin or small round cake pan at 350°F (175°C) for 18–20 minutes, until a toothpick comes out clean.
  2. Let cakes cool completely, then place them in the freezer for 20–30 minutes until firm — this makes decorating much easier.
  3. Remove cakes from freezer and apply a smooth, even layer of pre-made cream/frosting over the top and sides of each cake.
  4. Working in small sections, scoop sprinkles and gently press them into the frosting by hand to begin building your design.
  5. For the leopard print pattern, use tweezers to carefully place individual black and colored sprinkles in a leopard spot arrangement, working in layers to build depth and accuracy.
  6. Continue placing sprinkles until the entire surface is covered with your desired design. Chill briefly if the frosting softens during decorating.
  7. Serve immediately or refrigerate until ready to eat.
