- 2 large eggs, beaten
- 1 flour tortilla (8-inch)
- 30g (1/4 cup) cheddar cheese, shredded
- 1 tsp butter
- 1/4 tsp salt
- 1/2 tsp black pepper
Instructions
- Whisk the eggs with salt and pepper in a small bowl until well combined.
- Melt butter in a non-stick skillet over medium heat for 30 seconds.
- Pour in the eggs and cook, stirring gently with a spatula, for 2-3 minutes until soft curds form.
- Place the flour tortilla in a separate dry pan over medium heat for 30 seconds per side to warm.
- Sprinkle the cheese over the center of the tortilla and top with the scrambled eggs.
- Fold in the sides of the tortilla and roll tightly to secure the filling, serving immediately
