Ingredients

  • 2 large eggs, beaten
  • 1 flour tortilla (8-inch)
  • 30g (1/4 cup) cheddar cheese, shredded
  • 1 tsp butter
  • 1/4 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Whisk the eggs with salt and pepper in a small bowl until well combined.
  2. Melt butter in a non-stick skillet over medium heat for 30 seconds.
  3. Pour in the eggs and cook, stirring gently with a spatula, for 2-3 minutes until soft curds form.
  4. Place the flour tortilla in a separate dry pan over medium heat for 30 seconds per side to warm.
  5. Sprinkle the cheese over the center of the tortilla and top with the scrambled eggs.
  6. Fold in the sides of the tortilla and roll tightly to secure the filling, serving immediately
